Easy, delicious Pepper-Lime Chicken

It’s in my oven right now, and it smells so good!

2.5 – 3 lbs of meaty chicken pieces (breast halves, thighs, drumsticks)
1 TBS finely shredded lime peel
1/4 cup lime juice
1 TBS cooking oil
2 cloves garlic, minced
1 teaspoon dried thyme or basil, crushed
1 teaspoon black pepper
1/4 teaspoon salt

Step 1: Skin chicken if you want to be extra healthy. Then place chicken pieces on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat for 20 minutes, or until light golden brown.

Step 2: Meanwhile, mix lime peel, lime juice, oil, garlic, herbs, pepper and salt in a small bowl. Brush the chicken with the mixture. (If you’re like me and don’t have a brush, just drizzle it with a spoon.) Turn the pieces over and brush with more mixture. Broil for about 10 more minutes, or until chicken is no longer pink inside. During last five minutes, brush often with the lime mixture.

Step 3: Serve with baby red potatoes and fresh steamed asparagus. Enjoy!

The most amazing packing list

Everything I know about packing I learned from my friend Carly.

Brains and bubbles

Today I got shot #2 of, uh, dried infected rodent brain tissue. “Japanese Encephalitis Virus vaccine is an inactivated vaccine derived from infected mouse brain.”
Suffering neither facial swelling nor respiratory distress, I rode my bike to the park to read The Miracle Life of Edgar Mint.

Then I met my dad at the bubble tea place for fun, chewy fun and fished a ‘bubble’ out for him to try. He said it was like a gummi bear with no flavor. Did you know that bubbles are tapioca pearls made from tapioca starch, processed from the bitter cassava plant?

Look out, here I come

So, it’s all set. I will fly to Bangkok from New Orleans on May 12th to start work (on May 16th) at the UNESCO Bangkok’s Regional Bureau of Education on their adolescent reproductive health Web site.

From June 13th to June 24th, I’ll take an intensive Tulane University course in Bangkok and Chiang Mai called “Thailand’s Response to the HIV Epidemic”. On June 25th, Carly and I will start our outrageously exciting overland journey to Hanoi. (Details coming soon…)

Population Development International (PDI) has a small Vietnamese off-shoot organization called Sustainable Community Development (S-CODE) where I’ll be working in Hanoi from July 4th until August 19th. Their office is located in the Hai Ba Trung District, near a beautiful park. On August 20th, I’ll head down to HCMC on the train to meet up with the whole family for Great-Grandma’s birthday party celebration. The return date to New Orleans (for my last semester of school) is set for August 31st.
