Easy, delicious Pepper-Lime Chicken

It’s in my oven right now, and it smells so good!

2.5 – 3 lbs of meaty chicken pieces (breast halves, thighs, drumsticks)
1 TBS finely shredded lime peel
1/4 cup lime juice
1 TBS cooking oil
2 cloves garlic, minced
1 teaspoon dried thyme or basil, crushed
1 teaspoon black pepper
1/4 teaspoon salt

Step 1: Skin chicken if you want to be extra healthy. Then place chicken pieces on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat for 20 minutes, or until light golden brown.

Step 2: Meanwhile, mix lime peel, lime juice, oil, garlic, herbs, pepper and salt in a small bowl. Brush the chicken with the mixture. (If you’re like me and don’t have a brush, just drizzle it with a spoon.) Turn the pieces over and brush with more mixture. Broil for about 10 more minutes, or until chicken is no longer pink inside. During last five minutes, brush often with the lime mixture.

Step 3: Serve with baby red potatoes and fresh steamed asparagus. Enjoy!
