Our plan is to make very simple, tasty meals that include at least one vegetable (organic and/or local whenever possible!) and which can be made in large quantity so we can take it for lunch the next day!
For tonight’s meal, we chopped up half a large onion, several cloves of garlic, yellow squash and red bell peppers. Sauteed them in olive oil, added salt, fresh ground pepper and dried basil. Then added seitan for high protein. Served over delicious brown rice with a dash of low sodium organic soy sauce!
